I made this recipe just now and I love it. I used pumpkin seeds, rather than sunflower, since that is what I had on hand. I also left out the dark chocolate, since it was plenty chocolatey for me with just the cocoa powder.
The recipe creates a small, one-person amount of granola, I think. Have you, or any readers, tried to double it? If so, would I need to change any of the proportions?
I made this over the weekend and have been singing its praises to everyone I know. Doubled the recipe and it turned out great. I kept the proportions the same, but subbed out the doubled portion of sweetener for some sourdough discard!
