Something about eating a substantial breakfast that isn’t just toast with some peanut butter and banana has become a difficult task for me as of late, so I’ve started preparing breakfast meals and additions to make eating my first meal of the day a lot easier. This recipe is my dreamy, decadent version of a chocolate granola. It’s got dark chocolate, cocoa powder, a variety of nuts, seeds, and coconut oil, which I know the wellness girlies will love since it’s got lots of protein and antioxidants.
I like adding a handful of this granola to my Greek yogurt with fresh fruit and an extra drizzle of honey on top, but you can also serve it with milk and eat it like a bowl of cereal (I’ve done both).
Dry Ingredients
1 cup rolled oats
1/3 cup chopped walnuts
1/3 cup pecans
1/4 cup sunflower seeds
2 tablespoons sesame seeds
1 tablespoon ground flax seeds
45g of dark chocolate, chopped
1 tablespoon cocoa powder
1 teaspoon cinnamon
Pinch of salt
Wet Ingredients
1/3 cup maple syrup or honey
2 tablespoons tahini
2 tablespoons coconut oil
1 tablespoon peanut butter
1 teaspoon vanilla extract
Instructions
Preheat the oven to 400 F.
Combine the maple syrup, tahini, coconut oil, peanut butter and vanilla extract in a large bowl until smooth. Taste and adjust sweetness as desired.
Add the rolled oats, walnuts, pecans, sunflower seeds, sesame seeds, ground flax seeds, dark chocolate, cocoa powder, cinnamon and a pinch of salt into the same bowl; stir everything until combined.
Transfer the granola mixture into a large sheet pan lined with parchment paper, then spread it out into an even layer.
Place it in the oven and bake for 7 to 8 minutes or until deep golden brown and crispy. Keep in mind this will happen really quickly, so do not leave your oven unattended!
Let the granola cool for 15 minutes before serving. Store leftovers in an airtight container at room temperature for up to a week.

I made this recipe just now and I love it. I used pumpkin seeds, rather than sunflower, since that is what I had on hand. I also left out the dark chocolate, since it was plenty chocolatey for me with just the cocoa powder.
The recipe creates a small, one-person amount of granola, I think. Have you, or any readers, tried to double it? If so, would I need to change any of the proportions?
