I've been enjoying your newsletter and am so excited for this! My adopted son is half Filipino and I've been trying to cook more of his birth culture's food at home. I've discovered that there's a dearth of plant-based Filipino recipes out there, so you're definitely filling a gap.

Funny thing, but I found again a true story thing that also did not make my first career dreams come true. I worked in a restaurant when I was young, but then I realized that it's not possible for me to stay so long in the kitchen, but it's better to cook what I want and when I want at home, without any stressful situation and having the same health problems as you. It's a pleasure to understand that you can feel my emotions and try to imagine that I've been cooking since I was 7 years old, I still can't bear these difficulties not to work in the kitchen. But that's not the only reason. Doing the same thing day after day, working as a cook is a common routine and part of the profession, so for me it wasn't what I was looking for. And now, thanks to my writing teacher, I get to combine those two things at once.

I can't wait for your cookbook. I hope it'll be available through Amazon or just regular worldwide shipping. I'm a newbie to Filipino cuisine, so I'll keep an eye out for your future posts.

Cheers!

Max
