This recipe originally appeared in Issue 005 of Food On My Mind in 2021.
Ingredients
2 pounds of baby potatoes
4 tbsp stone ground mustard
1/3 cup kewpie mayo (or your mayo of choice)
1 cup fresh dill, chopped
1/2 tbsp apple cider vinegar
extra virgin olive oil for roasting
kosher salt and ground black pepper to taste
Instructions
Preheat your oven to 400F.
Boil the baby potatoes in a pot of salted water for 20 minutes or until fork tender. Drain and transfer the potatoes onto a sheet pan, then pat it to dry using a tea towel and let it cool for 3 to 5 minutes. Note: Depending on how big your sheet pan is, you might have to use two.
Using the back of a measuring cup or a potato masher, smash the potatoes to create little cracks while still keeping them whole. Coat the potatoes with olive oil, then season with a generous pinch of salt and pepper. Roast them in the oven for 45 minutes, flipping halfway through. Note: Depending on how hot your oven is, you can take it a step further and crank up the heat to let the potatoes crisp up even more.
While the potatoes are roasting, combine ground mustard, mayo, apple cider vinegar, fresh dill, a pinch of salt, and freshly cracked black pepper in a large mixing bowl. Set aside.
Transfer the roasted potatoes to the bowl and mix thoroughly until each potato is coated. At this point, you can add more mayo or stone-ground mustard to taste. Serve immediately and enjoy while hot.
