Word on the street is I’ve become a toast girly, and well, the critics aren’t wrong. I’ve been making and eating a lot of it recently, either as a meal, snack, or dessert.
This chickpea toast is a staple in my household. Leftover chickpea salad can be stored in the fridge for up to a week, which is nice to have for days when I can’t be bothered to cook. Sometimes, I like to kick it up a notch and fry my toast using good-quality olive oil, which adds an extra layer of umami.
